WHAT ELSE CAN I THINK OF THAT DOESN'T SOUND TOO MUCH LIKE A HOGWARTS SPELL RECIPE
Ok... It's been busy.... blimmin busy... In between trying to carry on with the 06.30 to 19.30 day job, I have also tried to find time to create. A chili sauce chef needs time. I have to try and be one without much time. One still needs to make time to help at home, be there for the family, be part of the family... relax, sleep, eat, cook, walk the dog, shout at the cats AND the dog, feed the rabbit,.... We seriously need more hours in the day.
That said... I HAVE found time to create as and when I can. Working out the different flavours between red Habaneros and Surinaam yellows for example takes time, so yes, I HAVE made some chilli sauces that don't appear to have worked... BUT there is a huge difference between a chilli sauce that you trying dipping with and one you cook with.
I made a yellow hot chilli sauce and asked people what they thought. This in hindsight was a big mistake as this most certainly was NOT a dipping sauce.. it tasted HOT, but lacked anything that you would associate as a dip sauce! Not sure what I was thinking but I won't make that mistake in a hurry..
(Update: What I DID forget to mention was a few people cooked with it and thought it was "awesome" - their words..not mine..... I must admit, I cooked with it and still didn't feel it was one of my best - that's experiments for you.....am just so pleased that people trust me to at least give it a go... especially with the experiments!) Lots more experiments to come!
I have recently worked on combining Madame Jeanettes with red Habaneros and others with various spices and herbs and I came up with a great Basic Chilli Sauce - this being something that I can use in the same way as Indian recipes and restaurants use a Basic Curry Sauce - you simply add it to other ingredients to make a variety of chilli sauces and you can add as much or as little to change the chilli heat. I am SO pleased with this approach - it's working absolutely brilliantly!
SO.. I can now create, making all sorts of wonderful flavours and different sauces - my latest is Pineapple, Kiwi Fruit and Coconut - My own Tropical Chili Sauce - and can simply make it as 'Chilli hot' as I/people want.... This one has gone down well as I have had a lot of re-orders already!
I have Beetroot, Coriander and Carrot waiting in the wings.... again, finding the time is the main problem at the moment... At the same time I am working on the new chilli sauce Webpages within WWW.STRANGECARROTS.COM and that is certainly taking some time. I am also working on the new label for the new sauce name which I am keeping guarded for now.. I am a bit of a perfectionist with this stuff so this is also taking time... Like I said.... MORE HOURS IN THE DAY PLEASE !!!!!
