Spicy Indian Omelette
Just about the same ingredients as per the Spicy Cheese on Toast - this is another tasty lunch, supper or just when you're peckish!
2 tbls Olive Oil
3 eggs, LIGHTLY beaten in a bowl just so the yolks break and then mixed lightly with the white
1 small onion - Finely chopped
120g / 4oz Mature Cheddar cheese
1/4 tsp Ground Cumin
1/4 tsp Ground Coriander
1/4 tsp Turmeric
1/4 tsp Hot Chilli Powder (1/2 tspn for extra zing!)
2 tbsp finely chopped Coriander
A couple of 'twists' of black pepper from a pepper mill (another regular of mine)
1 tsp dried Provencal Herbs (optional - but I use this in everything!!!)
Heat oil on High in a large saucepan
Fry, while gently stirring for 1 minute
Turn heat to Low to Medium
Add all Ground Spices and fry for another minute - keep stirring so the spices don't burn - add another dash of olive oil if you're worried.
Add the eggs and tilt the saucepan slightly up and down over the heat so the egg mixture goes evenly around the pan -
After 45 seconds (the egg should be firming up), Add the cheese, all over the egg mix - also throw around liberally (into the pan!), the provencal and coriander herbs
Keep tilting the mix back and forth until the mixture sets firmly all over.
Depending on how you prefer your omelette, serve when it looks like .....an omelette !!!
(My own favourite is to serve onto 2 slices of buttered bread)
NOTE: If Omelette making isn't your thing: when mixing with the cheese and trying to use a spatula to serve, don't worry if it breaks up. It might look like a complete mess but I promise you, it still tastes delicious !!!!!!
